DIY Your Favorite Elon Eats

Now it's not as simple, but it’s just as tasty and arguably more fun: create your favorite Elon Eats at home with these copy-cat recipes! The Root Burger from The Root

The Root Burger is a fan favorite for Elon students and Burlington locals. The burger features a warm, crisp bun, a fresh beef patty, sautéed mushrooms, a tasty truffle aioli, shaved parmesan, lettuce and tomato. The star of this show truly is the truffle aioli and we here at The Edge, think this recipe for a homemade version is a close match to the trackside’s treasured topping.

Truffle Aioli Ingredients:

  • ½ cup mayo 

  • ½ cup sour cream 

  • 1 tbsp truffle oil 

  • 1 tsp minced garlic 

  • ½ tsp white pepper 

  • 1 tbsp lemon juice

Directions: 

Blend together until smooth, stir and enjoy! This simple dip can last up to three days in the fridge, but it is unlikely there will be any leftovers after you spread some on your Root Burger and dip your fries for a delicious side dish!

Chicken & Waffle Taco from Tangent

This unique taco puts a spin on the southern staple, chicken & waffles. Featuring hand-breaded chicken strips, tangy maple slaw, bacon maple mayo, and bacon crumbles all on a flour tortilla. The ingredient that stands out and has the most complex flavor profile in this dish is hands down the tangy maple slaw.

Ingredients:

  • 1 head (small) shredded green cabbage 

  • 3 carrots, peeled and grated 

  • ½ red pepper, diced 

  • 1 tbsp minced onion 

  • 4 tbsp extra-virgin olive oil 

  • 3 tbsp apple cider vinegar 

  • 2 tbsp maple syrup 

  • 1 tsp celery seeds

  • ½ tsp kosher salt 

  • Black pepper to taste

Directions: 

In a large bowl toss together the green cabbage, red pepper, and carrots. In a small bowl, whisk together the onion, olive oil, vinegar, maple syrup, celery seeds, salt, and pepper. Once thoroughly mixed, pour the dressing over the veggies and mix until evenly coated. Refrigerate and enjoy!

Hummus from Med Deli

With so many delicious meals on Med Deli’s menu, it was impossible to choose just one to dissect. A common ingredient in many Mediterranean dishes is hummus. It’s delicious, healthy, protein-packed, and a great addition to any meal or snack.

Ingredients

  • 1 cup dried chickpeas 

  • 2 tsp baking soda

  • Juice of 1-1.5 large lemons 

  • 2-4 garlic cloves, grated

  • 1 ¾ tsp kosher salt

  • 1 cup sesame tahini 

  • ½ tsp ground cumin  

  • Paprika, for garnish 

  • Olive oil, for garnish 

  • Parsley, for garnish

Directions: 

In a medium-sized bowl, cover the chickpeas in cold water, add 1 tsp of baking soda and soak overnight at room temperature. In the morning, drain and rinse. In a medium pot, place the pre-soaked chickpeas in about four inches of water with another tsp of baking soda. Let the pot come to a boil over high heat. Reduce the heat to medium and allow the chickpeas to simmer until soft. This will take 1-1.5 hours. For extra creamy hummus, overcook the chickpeas. 

While the chickpeas are cooking, start to prepare the tahini sauce (flavor). In a blender, combine the lemon juice, garlic, and salt. Blend and let sit for about ten minutes before adding the cumin, tahini and more salt. Blend until the mixture becomes thick. Once it has clumped into a paste, add ice water and blend until creamy. As the mix in the blender becomes creamy, add the warm chickpeas and blend until perfectly smooth. Add seasoning to taste, pour and plate with olive oil drizzle, paprika dust, and parsley sprinkles for presentation and enjoy!
